What is the problem with soy?
Soy is one of the 8 most common food allergens, right up there with nuts, eggs, dairy and shellfish. For the severely allergic, soy foods are life-threatening. Additionally, thousands of people are affected by soy intolerance, a condition similar to dairy intolerance. Soy products have other harmful effects, such as aggravating thyroid conditions. Even for those who don’t have medical issues with soy, there are environmental concerns. The conventional soybean crop is nearly 90% genetically modified. Many soy foods such as Textured Vegetable Protein (TVP) are heavily processed to remove toxins naturally occurring in soybeans, and even modern tofu is no longer the safer fermented product it once was. The bottom line? If you’re a vegan or a vegetarian who can’t or won’t eat soy, the heavy reliance on soy protein in commercially prepared foods makes cooking and eating a tedious chore.
What if I have other Food Allergies–dairy, nuts, peanuts or wheat (gluten)?
